Jerk Chicken

What is the one thing that first comes to mind when you think of summer?? Ok…besides beaches? Food! It is officially cook out season! And we know you don’t want to do the same ol’ hot dogs and burgers that everyone does. Don’t worry, we’ve got you covered! Ingredients:
  • 12 oz fresh raspberries
  • 1 cup fresh lemon juice, chilled
  • 1/2 cup cold water
  • 1/2 cup granulated sugar (or to taste)
  • 1/2 cup honey
  • 1 liter (33.8 oz) sparkling water or club soda, chilled
  • Fresh mint and ice, for serving

Instructions:

  1. Place raspberries in a food processor and pulse until well pureed. Force raspberry puree through a fine mesh strainer into a bowl.
  2. In a large pitcher (if you don’t have one large enough you may need two) whisk together water and sugar until sugar has dissolved. Pour in honey and mix until blended. Stir in raspberry mixture and lemon juice then pour in club soda and stir once. Serve with ice and fresh mint.

What says summer like a cool glass of lemonade?


pineapple salsa

Ingredients:
  • Whole pineapple
  • 1 cup pineapple
  • diced 1 cup peppers
  • diced (any combination of red, orange, yellow or green peppers)
  • 1 cup Roma tomatoes
  • diced ⅓ cup cilantro
  • chopped ¼ cup onion
  • diced 2 limes
  • Salt and Pepper
  • Optional: 1 jalapeno, seeded and diced
Instructions:
  1. To make the pineapple bowl, cut about ⅓ of the pineapple off, leaving the stem attached to the larger piece of the pineapple. Make a cut around the outer edge of the pineapple fruit and make cuts across the middle too. Use a metal spoon to loosen and scoop out the pineapple chunks. Pour the extra juice out of the pineapple bowl so that it is empty.
  2. Dice enough of the pineapple chunks to make one cup of diced pineapple to be used for the salsa and save the rest for another use.
  3.  In a small bowl, mix together diced pineapple, diced tomatoes, diced peppers, minced onions, chopped cilantro, lime juice, salt, and pepper.
  4.  Transfer the salsa to the pineapple bowl for serving.
This recipe would go great with fish tacos, grilled chicken or served as an appetizer with chips!

Ingredients:
  • 1 onion, chopped
  • 1/2 cup chopped green onions
  • 1/2 teaspoons dried thyme
  • 1 teaspoon salt
  • 2 teaspoons sugar
  • 1 teaspoon ground allspice
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon black pepper
  • 1 habanero or Scotch bonnet (very hot), or jalapeno (more mild), seeded, chopped fine
  • 2 tablespoons soy sauce
  • 1 tablespoon cider vinegar
  • 1 tablespoon vegetable oil
  • 1 whole chicken, cut in sections, slashed 1/2″ deep with a knife every few inches

Instructions:

  1. Combine all ingredients in a food processor, and process until a smooth puree forms. Put the chicken in a large bowl, and pour over the marinade. Mix the chicken pieces around to coat them completely, cover, and marinate at least 6 hours.
  2. Remove chicken from the jerk marinade and grill over charcoal until cooked through (internal temp of 165 degree F). You may also broil, or roast the chicken in a hot oven (425 degrees F).

This recipe is a great way to spice up your dinner!


Grilled VegetablesGrilled Sweet Potato and Vegetable Skewers

Ingredients:

  • sweet potatoes
  • bell peppers (red, green, orange, etc.)
  • red onion
  • zucchini and/or yellow squash
  • portobello or cremini mushrooms
  • extra virgin olive oil
  • kosher salt and freshly ground black pepper
  • smoked paprika
  • garlic powder
  • dried basil
  • dried oregano

Instructions:

  1.  Scrub and dry sweet potatoes. Pierce several times with a fork. Bake or microwave until just knife-tender. (You don’t want them too soft or they’ll fall apart on the grill.) Cool before slicing into cubes.
  2. Chop remaining vegetables into bite-size cubes. Thread sweet potatoes and vegetables onto skewers. Brush with olive oil and season with kosher salt and freshly ground black pepper. In a small bowl, combine a spoonful each of smoked paprika, garlic powder, basil, and oregano. Sprinkle over each side of the skewers.
  3. Preheat outdoor grill or indoor grill pan to medium-high heat. Grill skewers until the vegetables are tender and slightly charred. Serve immediately.

Fresh, seasonal veggies are a must have for every meal!


Cinnamon Sugar Grilled Peachesgrilled peaches

Ingredients:

  • ¼ cup (1/2 stick) salted butter, at room temperature {Look for the REAL® Seal!}
  • 1 Tbsp. + 1 tsp. granulated sugar
  • ¼ tsp. cinnamon
  • 4 ripe, yellow-flesh peaches, halved and pitted
  • vegetable oil

Instructions:

  1. In a small bowl, whip the butter with a spatula until smooth. Add the sugar and cinnamon and mix well.
  2. Get your grill going on medium-high heat.
  3. Lightly baste the peaches with the oil and place face-down on the grill. Cook until the tops are slightly softened when you touch them. There’s no need to move them or check them, just wait until those tops are slightly soft!
  4. Remove the peaches from the grill and top with the cinnamon butter.
  5. Serve warm.

Add a scoop of ice cream to make this dessert even more delicious!
